Earth Fare Mock Chicken Salad with Tofu and Veganaise

Chicken salad is a weird concept isn't it? It's chicken paste, basically. So you can imagine I always thought it was super unappealing, but found myself enjoying it if it was mock chicken salad. My first introduction to the concept was at Earth Fare. I'd grab a little half pint every time I went and they had it in stock. Then they closed! But now they are back! And their deli chef went to Rosewood Market and made a pretty much exact replica of the vegan deli style mock chicken salad there too.

Earth Fare Mock Chicken Salad Recipe

So I made some mock chicken salad that I swear stacks up to the versions at Earth Fare, and Rosewood Market, and especially the less-good one at Whole Foods. The only reason I need an at-home version is because Patrick loves the stuff and could easily scarf down a half pint before I've finished unloading the groceries.

Given that I've never been much of a chicken salad person, I had to look up how normal people eat it. Looks like on a croissant sandwich is a popular option, as is wrapped in a lettuce cup, and with crackers are the three most popular ways to eat chicken salad. Vegan chicken salad shouldn't be any different, right?

I had some friends over for lunch the other day and NO ONE believed me when I told them that the salad was completely plant based- They thought it tasted just as good, if not better than one made with actual chicken!

Homestyle vegan chicken salad made with tofu, almonds, celery, onion and raisins tossed in a creamy vegan dressing. This salad is delicious, protein packed and great for sandwiches and wraps. Vegan and gluten-free.

Chicken salad is the perfect meal prep recipe! Double or triple this recipe for healthy meals and snacks all week long. After mixing all of the ingredients together, store in an airtight container in the refrigerator. The salad will keep for 3-5 days.

This vegan chicken salad is amazing piled on a sandwich, stuffed in a wrap, or on top of a crunchy salad! Made with protein-packed seitan, hearty chickpeas, and creamy vegan mayo seasoned with fresh dill and scallions. Whip up a batch for lunch today!

That last thing didn't start happening until the last time I made this vegan chicken salad. He was pretty good until the day I started shooting the video (which you can view at the bottom of this post) and during the 15 seconds while I had my back turned to get some dill out of the fridge, he made his way onto the counter and started stuffing his little face with chickpeas.

Some recipes for vegan salady sandwich fillings use chickpeas on their own (like this one), and while chickpeas are great, they're not fooling anyone. Seitan on its own is quite chickeny, but it's a little too firm for chicken salad by itself. Mix it with some smashed chickpeas and you've got the perfect texture.

You can use homemade seitan or store-bought. If you use store-bought, you'll need exactly one eight ounce package. If you make it yourself using my recipe, go with the chicken flavor (I guess that's kind of obvious!), and you'll need about a half of a batch, or one slightly scant cup once it's diced.

The best (mock) chicken salad I ever had was from a farm stand in Hawaii. This recipe produced a chicken salad that was close, but I really need to go back to Hawaii to be sure. Haha!Seriously, it was delicious and I am running my fork around the empty bowl as I write this. I bragged to my vegan sister about it, but she thinks her torn pre-frozen tofu recipe is wonderful, so I challenged her to a chicken salad smack-down at the next family get-together. I know who is going to win!!! :-)

Love this chicken salad recipe. For variety, today I omitted the dill and added (oriental) curry powder to the mayo, some dried cranberries and the tiniest pinch of cayenne (to balance the sweetness of the cranberries). OMG!!! Best curried chicken salad ever. Thanks for all of your great recipes. I am loving them!

Many holiday celebrations happen at dinner time. Many recipes therefor are for dinner meals. What about lunchtime recipes? This festive cranberry pecan chicken salad is a perfect choice for your lunchtime festivities!

Combining the flavors of the holiday and winter season is a great option. What says Fall/Winter more than cranberries and pecans? These ingredients also add an interesting texture and flavor combination to chicken salad. The colors are pretty too, which is a bonus.

HAVE ALREADY MADE THIS FOUR TIMES,!I had never made chicken salad but this looked delicious so I bravely made it doubting very much my husband would like it! Well, he LOVES IT!!! He has requested it a couple times now. We just eat about half cup to a cup out of a little bowl or with ritz crackers. I also add a half an apple. I slice it about 1/8 inch thick, cut slices in half lengthwise then finely chop it and mix in! It's better if it sits all day or overnight!

Looking for a nice "clean" chicken salad recipe to do for a New Year's Eve lunch and this recipe was perfect with simple no nonsense ingredients! I boiled the chicken breasts the night before and made the salad in the morning. I am allergic to berries, so used chopped cherries instead. A little too much onion for me, but it was really good and even better the next day. This recipe is a keeper and next time I would make it a day ahead to let the flavors mingle overnight Delish!.

A few years back when I was pregnant with my daughter, I had food cravings like most pregnant woman do. One of my cravings was for Willow Tree chicken salad. Almost every day for lunch, I went to a little sandwich shop about a block away from my office, and I would get the exact same thing to eat: a Willow Tree chicken salad sandwich (and this sandwich shop specifically stated it was Willow Tree for good reason!) on sourdough bread, milk, and a piece of fruit.

Willow Tree Farm is a New England-area food company and poultry farm based out of Attleboro, Massachusetts, famous for their deli chicken salad and chicken pot pies. According to the Willow Tree website, they credit their chicken salad as one of the reasons the company has flourished over the years, and their products are also sold at grocery chains all along the East Coast of the United States.

Thank you for this recipe. I saw it on Pinterest and made it tonight for dinner with some chicken noodle soup. The chicken salad us delish! I used 2 cans of chicken breast in water and it worked great.

A basic feast (cỗ một tầng) consists of 10 dishes: five in bowls (năm bát): bóng (fried fish belly), miến (cellophane noodles), măng (bamboo shoot), mọc (meatball), chim or gà tần (bird or chicken stew dishes) and five on plates (năm đĩa): giò (Vietnamese sausage), chả, gà or vịt luộc (boiled chicken or duck), nộm (Vietnamese salad) and xào (stir-fried dishes). This kind of feast is traditional and is organized only in northern Vietnam. Other variations are found in central and southern Vietnam.

These ones are made from vital wheat gluten, which is the protein left after the starch has been removed from wheat flour. Vital wheat gluten is used to strengthen flour for bread-making, and also to make plant-based meat, known variously as seitan, mianjin, and wheat-meat.Seitan has been made in Asia for centuries, and is well-known in Buddhist culture, where meat-eating is not always a thing. If you've seen tins of mock duck or mock chicken in Chinese supermarkets, you'll be familiar with at least a couple of its uses. One of the great things about living in SE Asia was the abundance of seitan, especially in George Town, Penang (Malaysia), where there's a huge Chinese community. If you're ever in the area, I highly recommend Lily's Vegetarian Kitchen, where you'll find a veritable feast of seitan dishes!

Rachel, I am thrilled that you and your husband enjoyed the sausages, thank you so much for letting me know. I suspect your 9 year old will too. I hope you all love the 'chicken' too; it's really good for chicken salad too, especially if you use my veganaise as well! xx

I tried them last night with some BBQ baked beans and I absolutely loved them. I had only tried seitan once before and that was in a Bosh "chicken nugget" recipe which came out very dry, crumbly and chewy. These sausages were perfect - like I told one of my vegans friends who asked what they were like, I said "firm but tender, like I like my men" lol... 2ff7e9595c
